Strawberry Rhubarb Crisp Recipe

Granulated sugar 3/4 cup
Cornstarch 1/4 cup
Vanilla extract 1 tsp
Ground cinnamon 1 tsp
All-purpose flour 1 cup
Rolled oats 1 cup
Packed brown sugar 1 cup
Salt 1/2 tsp
Unsalted butter, melted 1/2 cup

Preheat oven to 375°F (190°C). In a large bowl, mix sliced strawberries, rhubarb, granulated sugar, cornstarch, vanilla extract, and cinnamon until evenly coated. In another bowl, combine flour, rolled oats, brown sugar, and salt; stir in melted butter until clumpy. Spread fruit mixture evenly in a 9×13-inch baking dish. Sprinkle crumb mixture over fruit, covering completely. Bake 35-40 minutes until topping is golden and fruit bubbles. Cool 10-15 minutes before serving.
